Estimate of water consumption in the productive process of the cattle refrigerating industry in Ji-Paraná / Rondônia

The consumption of water in refrigeration industries is high due to the hygiene practices required by health authorities to maintain the quality of the products generated in these establishments. Estimating water consumption in this industrial sector allows the knowledge of the characteristics of the industry and, consequently, the implementation of measures for the rational use of water. The objective of the study was to estimate water consumption in the production process of a beef slaughterhouse, with an average slaughter of 550 heads / day, located in the state of Rondônia, in the northern region of Brazil. Likewise, the industry's water supply sources have been identified. The industrial production process was described, as well as the points of water consumption of the sectors that compose it were presented and quantified. Water consumption was estimated for the main sectors of the production process, being carried out differently for the sectors provided and without hydrometers. For the first sectors of the production process (Slaughter, Bucharia, Triparia and Middles), water consumption was estimated using systematic data for reading water meters present in the referred sectors, analyzing them statistically. For seconds (Transport, Corral, Boning, Expedition-Shipment of Frozen Products, Expedition-Shipment of Meat with Bone, By-products and Leather Expedition), the estimate was made by quantifying equipment that required water, such as hoses and showers, as well as other characteristics that influenced water consumption in the sectors in question. The estimated total water consumption for the refrigerator's production process was 14,253.34 m3/month. The highest water consumption occurred in Curral and the lowest in the Leather Expedition sector. The estimated water consumption per slaughtered bovine was 996.74 l/ox. The results obtained intend to serve as a reference and also as a subsidy for the rational and strategic management of water for refrigeration industries located in the North region, as well as in other Brazilian regions.
